If You Trust the Matrix, Trust All of It

There is a sentence one hears in every reasonable-sounding lecture on nutrition. It goes like this: supplements do not work because they extract a single molecule from a matrix whose synergies we do not understand. The complexity of whole food, the sentence says, cannot be reduced to its parts. Eat food, mostly plants, not too much. The prescription is homely and the tone is quiet. Its rhetorical structure is not.

A discourse imperviuous to refutation

The claim that the food matrix contains a plurality of unnamed active molecules is empirically defensible. Any careful chemist would agree. The problem is what is done with the claim once it has been asserted. Because the number of putative active molecules is very large and their interactions are very complex, no finite experiment can ever survey all of them. The invocation of complexity therefore becomes a shield that no evidence can penetrate. Any positive trial of an isolated molecule can be answered by pointing out that it lacks the matrix. Any negative trial can be answered by pointing out that it also lacked the matrix. The matrix is above the trial. It is above measurement. It is, in the end, above biology.

This is the same rhetorical structure that respectable science identifies, correctly, as the signature of a New Age argument. The invocation of a mysterious wholeness that no experiment can decompose is the standard move of the alternative medicines that the mainstream despises. The mainstream and the New Age share the structure. They differ only in the conclusion drawn from it. The New Age concludes that one should drink green juice. Michael Pollan concludes that one should eat mostly plants. Both authorities rest on the same unfalsifiable premise about the wisdom of a whole they do not have to characterize.

A discourse that cannot be refuted is not a scientific discourse. It is a moral discourse dressed in the vocabulary of science. Recognising it as such is the beginning of taking it seriously.

What the matrix actually contains

If one were to inventory a wild plant diet honestly, the matrix would include a great many things the moral discourse of whole food does not name. Alkaloids, in profusion. Tryptamines. Phenethylamines. Beta-carbolines. Terpenes with activity at receptors of the central nervous system, myrcene and linalool at ordinary culinary doses among them. Ergot alkaloids in cereals cultivated without mechanical sifting, for a thousand years across Europe. Peptides bioactive at hormone receptors. Phytoestrogens. Iodothyronines in seaweeds. Cannabinoid-mimetics in cacao and in certain black peppers. The list is not exhaustive. It is not even close.

Among these are compounds that bind the serotonin 5-HT2A receptor as full or partial agonists. The receptor itself is a constitutive component of the human nervous system. The body synthesises its own agonist, N,N-dimethyltryptamine, in the lung, the pineal gland, and the cerebrospinal fluid, at concentrations low but measurable. Forty species of cactus, distributed across two independent lineages, have converged evolutionarily on the production of mescaline, a phenethylamine agonist at the same receptor. In the central Andes, a genomic signature of positive selection on genes governing this same receptor system has been documented in Aymara and Quechua populations, a trace of chronic exposure durable enough to leave a mark in the genome. The molecule is not exotic to the human body. It is one of the substances the human body was designed to encounter.

The whole-food doctrine does not name any of this. When it names the matrix, it names carotenoids and polyphenols and flavonoids. It falls silent on the alkaloids. The silence is not accidental. It corresponds, with striking accuracy, to the international drug schedules of 1971 and their national implementations. What one is allowed to praise in the matrix ends where the schedules begin.

The chair that isolates on demand

The rhetorical use of the matrix has a second inconsistency, and it is more revealing than the first. The prohibition against isolation is selectively enforced. It applies when the target is a universal vitamin or mineral, hors brevet, universally available, and threatening to no economic actor. It relaxes the instant a regional research chair funded by an agricultural sector wants to isolate a signature molecule from a local crop.

The list is long and geographically legible. Anthocyanins from wild Quebec blueberries at Laval and at Chicoutimi. Cranberry proanthocyanidins in the American Northeast. Resveratrol in the wine regions of California and Bordeaux. Curcumin in Indian research institutes. Olive polyphenols at Cordoba and Barcelona. Marine omega-3 in Tromsø and Reykjavik. Green tea catechins in Kyoto. Astaxanthin in Hawaii. Ginsenosides in Seoul. Each signature molecule is bound to a region, a chair, a producers’ association, a ministry of agriculture. In each case, the molecule is isolated, characterised, quantified, standardised, marketed, and sold under a trade name. In none of these cases does anyone at any of the universities involved rise to protest that the matrix has been violated. The matrix falls silent whenever the sponsor is legible.

The implicit rule is not biological. It is legible in three lines. Isolation is permitted when the molecule comes from a food attached to a regional economy, when the food has no prior universal physiological function that would compete with the vitamin canon, and when the extraction produces a brand or a patent that has a proprietor. Isolation is forbidden when the molecule is constitutive of the human body, when it is universally available as a generic supplement, or when it belongs to a category prohibited by inherited policy.

None of these criteria has anything to do with the biology of the molecule. They have to do with who is paying the chair.

The inverted hierarchy

The consequence, once one starts to see it, is difficult to unsee. Anthocyanin from the Lac-Saint-Jean blueberry, whose essentiality to any human physiological function has never been demonstrated, occupies a rhetorical position superior to ascorbic acid, an enzymatic cofactor without which the connective tissues of the human body dissolve in weeks. The blueberry molecule has a producer, a chair, a marketing budget, and a story. The vitamin has none of these. It has, instead, the more modest quality of being what the human body actually requires. Under the current hierarchy of respectability, this is a disadvantage.

The same hierarchy applies to the 5-HT2A ligands. The anthocyanin has a chair. The vitamin C has no chair, though it has a body of thousands of studies extending seventy years. The mescaline has no chair either, and a legal prohibition on top. All three have identifiable pharmacological actions, at ordinary dietary or physiological doses, on human tissues. Only one of them is respectable.

The version of the argument that is coherent

The problem with the whole-food doctrine is not that it praises the matrix. The matrix deserves praise. The problem is that the doctrine praises it selectively, in a pattern determined by the location of research funding and the schedule of controlled substances. A doctrine that truly took the matrix seriously would be inclusive in two directions at once.

It would accept, first, that isolated molecules at high dose have their own physiological reality and their own body of evidence, and that this evidence does not fall because the matrix is more complex than the molecule. The vitamin C studies of Pauling, the mitochondrial cofactor studies of Ames, the niacin studies of Hoffer, the magnesium studies of Seelig, the taurine studies of Yamori: none of these are refuted by the fact that whole food is complex. They are studies of what one specific component of the matrix does when one gives more of it than the ordinary diet provides. They are not in competition with the matrix. They are studies of the matrix, one component at a time.

It would accept, second, that the matrix contains what it contains. If chronic low-dose exposure to a 5-HT2A agonist was a feature of the ancestral human environment, and if the human body itself synthesises the same class of agonist, then the classified alkaloids belong to the matrix by the same principle as the anthocyanins. A doctrine that admits the anthocyanin and excludes the mescaline is not defending the matrix. It is defending an inherited legal taxonomy, using the language of biology as a decoration.

The inclusive version of the doctrine would say something the mainstream is at present unable to say. It would say that the matrix is what the body has co-evolved with, at high doses and at low doses, in the vitamins the body cannot make and in the alkaloids the body makes a little of, and that respecting the matrix means respecting what it actually contains, not what it is politically convenient to admit that it contains.

The stakes

The physiological rights framework rests on a claim about the biological constitution of the human being. What the body requires, what it synthesises, what it can no longer synthesise because a mutation deep in the primate line took the capacity away, what it has been exposed to on evolutionary time scales, are questions that admit of empirical answers. The answers are unequal in strength. Some are firm. Others are provisional. All of them are questions of biology.

The whole-food doctrine, in its current selective form, blocks these questions. It blocks them upward, by insisting that the universal vitamin canon is beneath the mystery of the matrix and should not be given at doses beyond the ordinary meal. It blocks them sideways, by insisting that the alkaloids the matrix contains are not part of the matrix at all. It permits them, in a controlled way, only where a regional chair of agricultural research wants a molecule to be permitted.

None of this is a defence of nutrition. It is a management system for nutritional discourse. A rights framework has no reason to accept it.

If one trusts the matrix, one trusts all of it. If one insists on isolating a molecule, one accepts that any molecule may be isolated, on the same grounds, without a schedule of respectable and unrespectable origins written by a producers’ association or a customs bureau. There is no third position that is coherent. Choose the matrix and you must include what it contains. Choose the molecule and you must extend the same permission to every molecule the body meets. Do both, and the vitamins return to the therapy from which they were expelled, and the alkaloids return to the food from which they were subtracted.

This is what taking the matrix seriously looks like when the argument is not doing work for someone.
