Why he matters here

Willett is on this list as the counter-figure the physiological rights argument is written against, and yet must engage with. The Harvard-centered nutritional-epidemiology school defines its object as population-level dietary patterns and their association with chronic disease, and treats the biochemistry of individual physiological status as, in practice, out of scope. That definition of scope is exactly what this resource is contesting.
